Mandarin Granita

Ingredients

Serves 4
4 cups mandarin juice, strained
1 cup sugar syrup (1:1 sugar to water)
juice of 1/2 a lime
zest of 1/2 a lime
zest of 1/2 a mandarin
Mint (optional)
10-12 mls Vodka to serve, chilled

Method

Mix juices and sugar syrup together. Place in a container in the freezer (add some zest if you want to) and allow to start freezing.
When it starts to form a crust run a fork through and scrape it. Keep freezing and scraping until frozen and granular.
Spoon into a glass, top with a little zest and chopped mint and pour a shot of chilled vodka (or pernod) over the Granita.
Makes a great palate cleanser after fish courses.
